Tuscan Cenci Recipe

2 C Flour
2 Eggs
1/4 C Sugar
1/4 C Butter (melted)
1 tsp Extra Virgin Olive Oil
2 tsp Vin Santo
Pinch of Salt
Zest of a Lemon (or Orange)
Sunflower Oil (for frying)
Powdered Sugar (for sprinkling on top – I used Vanilla flavored)

Shape your flour into a bowl (make sure it’s deep enough to hold all the ingredients).
Add eggs and fork scramble them.
Add in all the other ingredients. *Tip: make sure your butter is melted but not hot – let it cool so that it doesn’t cook the eggs.*
Knead for about 4-5 minutes.
Shape it into a ball and cover with plastic.
Let it rest for 30 minutes.
Roll out to as thin as possible on a floured surface.
Cut into 1″x 2″ (approx) rectangles.
Drop into hot oil.
Take them out as soon as they start to bubble up and turn golden.
Let dry on a paper towel.
Sprinkle with the powered sugar.
