Supplì are similar to Sicilian arancini but are a Roman street food specialty.

- INGREDIENTS: for 14 pieces
- 300 G RICE
- 350 G TOMATO SAUCE (OR PULP)
- 2 MOZZARELLA (100g each)
- 3 SPOONS OF GRATED CHEESE
- 2 LARGE EGGS
- BREAD CRUMBS
- EXTRA VIRGIN OLIVE OIL
- SALT
- BLACK PEPPER
- PEANUT (to fry)

- 150 gr. of arborio rice
- Pepper as needed
- 2 eggs
- Pecorino (150 gr.)
- Parmesan (200 gr)
- Breadcrumbs (250 gr)
- Flour (250 gr)
- Butter 50 gr
- Peanut oil for frying
For the breading:
- 250 grams of flour 00
- 2 eggs
- 250 gr of breadcrumbs

- Vegetable broth or water 300ml
- Onion 1/4
- Butter 15 gr
- Amatriciana Sauce
- Parmesan to taste
- Breading 2 eggs- Mozzarella 100 gr -Breadcrumbs to taste
For the Amatriciana Sauce
- Ingredients for 4 pers.
- Guanciale 300gr
- Peeled tomatoes / puree 700gr
- Pecorino / Parmesan cheese 120 gr
- Oil 3 tbsp
- Chilli and salt to taste
- White wine 20 cl
