Ricotta Pie Ingredients

Dough

1 cup of flour

½ cup of sugar

½ cup of softened butter

1 tsp yeast

1 egg

Filling

2 cups of ricotta

¼ cup of sugar

1 egg

1 egg yolk

Optional:  Powdered sugar

INSTRUCTIONS

Mix the dough ingredients in a bowl, cover and place in refrigerator for 30 minutes. Mix the filling ingredients in a large bowl.  Place the 2/3 of the dough ingredients in a baking tin with parchment paper and press firm to bottom.  Add the filling ingredients on top of the dough.  Sprinkle the remaining dough ingredients on top of the filling.  Bake at 360 degrees for 40 minutes.  Optional: Add powdered sugar before serving.
