Budini di riso
Budini di riso are one of my favorite Italian pastries. In fact, I prefer it to a cornetto filled with cream for breakfast.

Ingredients:
Shortcrust pastry:
240 g of 00 flour
120 g of cold butter
70 g of icing sugar
1 medium egg
untreated lemon zest
a pinch of salt
Rice cream:
480 g of milk
120 g of original rice
80 g of sugar
untreated lemon zest
a pinch of salt
1 teaspoon vanilla extract
Custard:
250 g of milk
60 g of sugar
2 egg yolks
20 g of corn starch
1 teaspoon vanilla extract
