Pennoni alla Norma can also be made using Canneloni. These pastas stuffed with eggplant and scamorza cheese and then topped with mozzarella make a great presentation and are simply delicious.

2-3 Eggplants
200 g smoked scamorza
100 g buffalo mozzarella
Grated cheese
400 g tomato sauce
Seed oil for frying
Extra virgin olive oil
