Fiori di Zucca
Ingredients:
8-12 fresh zucchini flowers
1 1/2 C flour
1 bottle of beer (pilsners work well)
Salt
Oil for frying
Prep flowers by rinsing, removing stamens, sepals, and stems.
Heat oil.
Add a big pinch of kosher salt to flour and stir.
Whisk in beer. Batter should be creamy (like pancake batter).
Dip flowers and let excess run off,
Fry 1-2 minutes in oil.
Let drain on paper towels.
Sprinkle with salt and serve warm.
Enjoy!
