Gnudi Gnudi are spinach and ricotta dumplings. They consist of spinach, Parmigiano-Reggiano cheese, ricotta, egg and flour.  Gnudi is like the inside of a ravioli but without the pasta.  They are normally served with a butter or tomato sauce.
