Cara’s Cucina – Aunt Linda’s Anisette Cookies

Ingredients

3 cups of flour
3 teaspoons of baking powder
3 eggs
1 cup of sugar
1 cup of vegetable oil
1/2 cup of milk

Icing:
1/2 c. confectioners sugar
3 tbs. anisette liquor

Preheat oven to 425 degrees.

Combine all ingredients in a very large bowl and mix with a big wooden spoon until blended. Batter will be very sticky.

Sprinkle hands and top of batter with a little flour. Pull off a golf ball sized piece, roll into a ball, then into a snake. On an un-greased cookie sheet, wrap the snake so one end is sitting on top of the middle – a mounded spiral.

Continue sprinkling flour on top of batter and on your hands as you go so dough doesn’t stick.

Bake cookies for 10 minutes. Allow to cool completely before icing.

Icing:
Mix powdered sugar in a small bowl and stir in anisette until a syrup forms.

Dip tops of cookies into icing, allow excess to drip off.

Place on a rack, over foil and top with rainbow nonpareils.
